Delicious Banana Bread from my massage therapist.
A great way to use up any super ripe bananas and also a lovely 3pm snack.
Packed with lots of healthy ingredients, you won’t feel guilty about eating this one.

- 3 bananas
- 3 eggs
- 1 cup almond meal
- 1 cup buckwheat flour
- 1/2 cup cacao
- 1/2 cup cacao butter (or normal unsalted butter)
- 1/2 cup rapadura sugar
- 1tsp baking soda
- Pinch of sea salt
- Splash of almond milkMethod
- Preheat oven to 180 degrees c
- Line 10cm x 20cm loaf tin with baking paper
- Mash 2.5 bananas in a separate bowl
- Melt cacao butter then add to sugar
- Beat until combined
- Sift and add all dry ingredients to mixture including eggs and gently combine
- Add milk, bananas and fold through
- Pour into the lined tin and slice the half banana lengthways and place on top
- Sprinkle banana with a little rapadura sugar
